Be careful how you order!! Ask what the market price is because they won't even give you a heads up!! Whole branzino is $140.00. Food was good but not sure a fish fillet is worth that.

Amazing service, with great food to match - the servers are very attentive and knowledgeable. The restaurant takes you back in time, with everything from the interior to the music contributing to the ambience. My favourite fish was the spicy rigatoni, but everything else we ordered was also excellent!

Second time going, great drinks, amazing food! I have gone with large groups/private parties. Therefore, we try a little of everything. Here is what I recommend... Old Fashion, Meatballs, Spicy Rigatoni, Veal Parmigiana, and Banana Forster. Ask your server about the rum selections too!

Love carbone! But every time I go back it seems that the quality keeps decreasing and they just invest on the show... cool but not enough since I used to love their food. Still maybe it was just a bad day. I would recommend the Spicy Regatoni and the tiramisu even though at this point it’s overpriced for the amount of food. The meat was just ok. The basket of bread is delicious! The show should you wish to have a salad is awesome. Staff is nice

We came here Sun April 15 before the Justin Timberlake concert and had the BEST experience. The bar staff was friendly while we waited to be seated for our reservation and once seated I just couldn’t have been happier with every single detail of the meal. Jim took care of us and was the perfect mix of cool and informed and you could tell he was passionate about the restaurant the food and our experience. The food was impeccable. We ordered the rigatoni, meatballs, Caesar salad, potatoes, and scallops. From the part of me that loved hanging at the “Green Mill” while I lived in Chicago due to the history for that venue the ambiance in this restaurant gives me the same vibe and is not even remotely imitated by any other restaurant I have frequented. The flair of an old Italian meal made with heart and passion makes Carbone a MUST while we are in Vegas for many visits to come. Seriously, there just aren’t enough words to describe how much we enjoyed this place.

We had the unfortunate experience of eating here this last weekend. As soon as the captain (the guy in the maroon jacket) saw that we were "only" going to be spending about $300, he was immediately cold towards us. He rolled his eyes whenever we would ask for something or ask a question, never checked on us, ignored us completely. He was Mr. Personality to other tables even offering them free limoncello, but not us. I wasn't aware that spending $300 on pasta was unacceptable. For the record, we would have ordered some alcohol with dinner, but we didn't want to spend one more cent there. We told the manager about him as we were leaving and asked that the full tip amount be given to the waiter, who was delightful, and not the captain. This was extremely disappointing as when we dined there a few years ago, our service was so amazing that we decided to go back. It was like it was a different restaurant this time. In a city that is so heavily service dependent, we expected more. We won't be returning.

One thing I do like about Vegas (and I don't love the place) is the food. Carbone actually stands up to its NYC namesake. Each course built upon the last and our private room was well attended and intimate. Strong showing from a down on it's luck town.

I was so pleased to be able to use a casino food credit at this restaurant and charge it my room at the Aria. The pickled cauliflower, the prosciutto, the fresh fresh mozzarella, vodka pasta dish, and martinis. The decor and atmosphere was outstanding, great service.

I've been to Carbone many times. The food here tastes good. However, the service is inconsistent. Today I waited extra long to be seated. The waiter didn't show himself until everything was ordered already. I had to ask to have menus brought to me. Water was never refilled. When they served my Dover sole the waiter thoroughly butchered. The deboning was not clean at all. I've had the Dover many times both here and at other restaurants. For the price I am paying I expect more attention to details. I like the food but after today's experience I am skeptical I will return again.

LOVE this place! It’s one of my favourites in Aria. I’ve been here four times and have never been disappointed. The decor, the service, the food, it’s all fantastic! The ambiance is so fun, classic and timeless. You will feel like you’ve gone back in time with the music, and where table side service is standard. The portions are quite large, so highly recommend sharing. You can probably do one appetizer, a pasta and one entree between 2 people. At least we found that to be enough. And you can always order more if you need it! Must try/my faves: Spicy rigatoni vodka Octopus pizzaiolo Veal Parmesan Cherry pepper ribs Ribeye Diana The complimentary limoncello and Italian cake at the end of the meal is a nice touch.

This was the one if the best restaurants that I've ever been to. The servers were knowledgeable and attentive. The drinks that we ordered were unique, delicious and strong. The food was awesome. Pricey? somewhat yes. BUT SOOO WORTH IT. we did family style. EVERYTHING was just plain EPIC! Italian fare infused w a bit of Gangster/throwback vibe. Try the Veal! (I always wanted to say that) but it's true. we had the Ribeye Diana, Lobster Ravioli, and Veal Parmesan and shared Family style. great portions, bread, oil, and fresh shaved Parmigiano Reggiano while you wait for food and Limoncello after was delicious!

One of the best Italian Restaurants in Las Vegas. It's on the second floor and is not the easiest to find if you are not looking for it. The restaurant is classy but no so much that you can not wear casual clothes. We really enjoyed it!

I called for a last minute reservation. But the reservation agent was very accommodating. And when we arrived @ 9 p.m. 45 minutes early for our 9:45 reservation, the hostess checked on table availability and got us seated @ 9:05 p.m. That's when the magic began. The service was excellent. The waiter immediately got our drink order & described the appetizers and how the menu is laid out. The octopus was so fresh and cooked with herbs & my husband & I were fighting over the last piece. He ordered dr.red the rib eye steak. I ordered a small meal (appetizer size lobster ravioli). The ravioli had an overwhelming amount of lobster. In fact, there were lobster bites around the ravioli. My husbands rib eye steak was cooked medium as he specified. Then the desert ( I chose between banana flambe and chocolate cake. The banana flambe was the winner and it didn't disappoint. The desert show was interesting coz it was made next to your table. And our waiter Chris offered to take a picture with my hubby's camera. Whatever food we didn't finish was wrapped up by Kevin. I would definitely return to this restaurant.

Very bad experience, paid in the restaurant 1000$ for food that took forever to come to the table and the staff were unpleasant and not helpfull. And the worth thing that my fendi shopping bag was stolen there and i was the last person to be seated on the table on the last service. They were very agressive when i claimed my fendi shopping bag which i had put it under my table and they didnt want to accept to view the cameras and made a stupid excuse like the cameras dont take all the angles of the restaurant and even the head of security didnt care and didnt help!!!! they just said we didnt see it.

So happy I was able to get a reservation here considering I can’t seem to catch one in NYC. Get the spicy rigatoni! You won’t regret it! It’s really just a perfect dish, hands down. This review is less about the food, more about the entire process of booking (group of 13+) and the poor service. The process of booking the large group reservation through Carbone's event coordinator (20+ emails/calls) was painful and them refusing to answer our questions on how they will accommodate our vegetarian guests, we still went ahead and booked (probably should have gotten the hint to not book). We were late to dinner (our fault we mixed up the time, but it would be wise for the restaurant to send a confirmation a day before like all other restaurants- we had several other reso's and they all called /emailed to confirm). Once seated, the food came out. Food was good for Italian American -- note that this place doesn't serve actual Italian food, if you are expecting that, you'll be disappointed. Amazing octopus, this is what the one star is for. They didn't serve the vegetarian meal as agreed upon -- the omnivores received two entrees, while vegetarians received one (suppose to be cauliflower steak + eggplant parm). we didn't say anything as it was apparent once we were seated they were more focused on getting us out by 8pm rather than actually serving us what we paid for. Things went further downhill when one of the servers offered us shots. We were clearly there for a bachelorette, his manner of phrasing led us to believe these shots were gratis-- also because every restaurant we went, shots were given to us. We had made no indication we wanted shots, and he said it is "customary to do shots at the end of the meal for bridal parties and he'll make up a great shot for us all". These shots were added to our final bill, along with additional salads, and did not remove the deposit of $800 we already had paid. To make matters worse, the server came up to the BRIDE angrily, demanding to know why we thought the shots were free. Why would you accost the one person who the event is for? This resulted in a round of apologies from the host/manager. All in all, we would not be back to this, nor the NYC location.

Fantastic Italian food and great service! I came here one night and I was surprised to see that the bar was open and had seats, so I sat right down without any wait. Let me just say that the bartender (I forget his name) was amazing. He knew the menu well and guided me towards some fantastic food. In addition, he made me a great Manhatten, probably one of the best I've ever had. The food was simply amazing. I really love Italian food because with simple quality ingredients you can really make the dish taste absolutely to die for. Everything was cooked well and I really loved that they gave you bread and parmesan cheese before any other food comes out. It's a great way to get a taste for the food here and to stave off any hunger.

I live in Las Vegas and work on the strip, so trust me when I say that I have eaten at some incredible restaurants! Carbone takes you back in time a little bit with the decor which is absolutely fun and beautiful. The gold high back booths and the private booths tucked in the corner are stunning, not to mention the giant chandelier. The waiters outfits remind me of an old school bellhop from the tower or terror at Disney, but its fun and not how you will see any other server dressed, anywhere. The meal comes out in courses (appetizer, pasta, entree and then dessert) if you want all those things of course, so be patient as some things like the steaks take longer to cook. My favorite part of dinner hands down was the Spicy Rigatoni which is BOMB lol not sure how else to say it. Its the best pasta I have ever had in my life, its so creamy with the perfect amount of spice and the al dente noodles are just drool worthy, seriously so good we ordered 2 more plates of it. Oh, and the bread, a carb lovers dream, just a basket overflowing with all kinds of carb yumminess! The pizza bread is just phenomenal. For dessert I highly recommend the lemon cheesecake, again drool worthy. So cream with the perfect amount of lemon it just explodes flavor. We were very happy with the service and ended up being there for about 4 hours. We will absolutely be back again.

Do I want to pay $30 for pasta? Not really. Did I do it because I was in Vegas and said "screw it!" Yep. For our last night in Vegas, my husband and I decided to have a nice dinner and I had heard some nice things about Carbone. The atmosphere was dark and romantic. Our waiters (There were two, it confused me haha) were attentive and nice. Besides our drinks, we ordered two of the Vodka Ragu and some asparagus. The pasta was great! The sauce had some nice depth and was the perfect amount of spicy. The asparagus was very "meh" and I'm surprised a place like Carbone would offer it. They didn't cook it all the way through, so it was just crunchy and hard to eat with no flavor. That was the only down side about our meal though. They definitely give you a lot of "extras". Large amounts of bread, picked cauliflower, Limocello and a marzipan cake. We had a good time, and if you're cool with the prices, I would suggest giving it a try.

The food here was so amazing! The service was just as wonderful. We started with the bread then caprese salad. The mozzarella was fresher than anything I'd ever had and so delicious! The tomatoes were so meaty... So tasty! We had the rigatoni a la vodka (not spicy, but soooo wonderful) and veal parmesan (covered in the same wonderful fresh mozzarella and flash fried basil). OMG... Such a fantastic meal!! I will be back.

Delicious food and hearty portions that will absolutely blow you away at this high end Italian joint located inside the Aria Resort. Came in with relatively low expectations as the general environment outside is mostly dedicated to gambling but it totally blew me away. Seated very quickly without any wait for 2 people on a Thursday evening during CES. Once we were situated in the comfy booths, took some getting used to with the small spot lighting for the table and the general dim atmosphere but the starter course of a freshly carved cheese from the block and some salami and cauliflower is a fantastic way to start the meal. Started with an appetizer of grilled octopus which was absolutely fantastic. There was 2 large sized portions of octopus which was perfectly cooked. Steamed to perfection from a juicy soft interior and just crispy enough on the outside with grill marks for extra flavor and caramelization. The other accompaniments such as sausage and potatoes were full of flavor. The entrees and sides are mostly a la carte so we ordered a veal parmesan and a delicious fish on the daily special menu. We also ordered the mushrooms and broccoli rabe. The veal was cooked very well and not over cooked being pounded out so thin and the portion size was absolutely massive. The fish was also cooked to perfection with a nice crispy skin and a juicy, moist interior that flaked as you pulled on it. The mushrooms sides were to die for albeit a tiny bit on the buttery/oily side. The broccoli rabe also turned out very well with just the right amount of seasoning. Service was extremely attentive and quick while not feeling rushed at all. Not super expensive for some of the most delicious Italian meals in the area. Large sized portions make this a great spot for a large crowd who may be hungry. Come check this place out if you're in the area.

Absolutely incredibly YUMMY, delicious food and impeccable service!!!! Andy St. John is the General Manager and not only professional, but gracious and an awesome storyteller....he told us the history of Carbone and explained the story behind having high backed booths and the "Chipped" dishes etc. You have to go to Carbone to hear the story! It was simply fabulous. We were celebrating our sister's reunion and a combined birthday (5 of us meeting from around the country). He exceeded our expectations to make this a special evening, it will be embedded in our memories forever. The family style of sharing foods was incredibly. Large portions, so be sure to share and try the various salads, pasta bowls and we had the Dover Sole which was to die for...Love dessert??? You will absolutely love their wide selection of choices... This will be our go to restaurant whenever we are in Las Vegas. Thank you everyone for making our evening so SPECIAL!

If you haven't been to this place, please book a flight to Vegas and make sure you go. Absolutely amazing!!! We got in waiting only 1 hour without a reservation and from there everything was a hit. We had many people serving us all of them amazing but Bonnie was beyond! The dishes are honestly so tasty that they will blow your mind. Please make some room for dessert the Nutella ice cream and the Cheesecake are delicio0us. Also they have househomade Limoncello! 100/10 :)

Unfortunately I have to give 2 stars due to our awful server. Food was good, ambience and complimentary bread, salami, pickles and limoncello - fantastic. We were there on Friday May 31 for a 6:30 reservation and sat in one of the beautiful 2 person booths along the wall. Sorry but I got better service a chilis for lunch the day before. Our chief server was moody and made us feel stupid for asking a question, not to mention bossy and not knowledgeable on wines or menu. Not what you would except from a 5 star restaurant in Vegas and for what you’re paying. Disappointed. Every time the guys was heading over to our table my mom and I would look at each other and say oh great, can’t you just leave us alone...now that’s insulting Carbone. We wishes the man in the white cleaning our plates and brining our food could be our server they were all great.

Definitely get the rigatoni and meatball my God were they delicious! Octopus was super tender and tasty. Great service very friendly staff, pricing is fairly normal for a place of this caliber. The porterhouse is nothing to write home about though stick with getting your steaks from a steakhouse but it was still delicious just not my pallet.

This was our second time at Carbone’s! We went last year and had such an amazing time that we had to return, mostly because of our amazing bartender- Robert. He was so personable, super knowledgeable about the menu, and really made our evening so lovely. The food is also wonderful- fresh bread and cheese when you arrive and a rainbow cookie before you leave. The rigatoni vodka is amazing and the mozzarella and prosciutto is so fresh!

This is the second time I come to this amazing Italian cuisine place . I was a little disappointed that Bonnie our last waitress that we requested wasn’t there but it didn’t matter . The new waiter was excellent as well . I love the music they play and the ambience of this restaurant. The food is very good . I recommend this restaurant and will definitely come back when I’m in town .
