When you want quality you go to Carne. I dont supply Carne but i raise/raised grass fed livestock so I know what it is and isnt, Carne is the best in town. When you want something custom, this is the only place to go! Only Chad and Shaun would grind the perfect burger patty together for me. So really Carne is your best bet for real meat.

Fred Meyers on Lakeway has better quality (USDA Prime) steak. Old world Deli, or Whole Foods have everything else you need.

If you’re not shopping for protein at Carne, you’re missing out. My wife and I are long-time customers and buy all of our meat here. On our first Whole Foods shopping trip we decided to swing by the meat department just to take a gander…it was immediately clear that their selection is of lesser quality. A Whole Foods steak looks like a Carne pork chop. ‘Nuff said. Don’t let a mega-retailer with an inferior product snuff out an amazing local business!

The most delicious meat I have ever tasted!.. And I eat a lot of meat. Very friendly and knowledgeable staff. Great customer service. -If you want something special they can order it in for you. Mouth watering house smoked ribs available every Friday at five. The bacon kicks hemplers butt hands down. I pick up a couple pounds of it every time I’m in. Worth the price any day. If you’re a Bellinghammer, or just passing through, Support local! Support small business!

Would be one star but this is the only butcher, unfortunately. The man who works here is incredibly rude. I've never felt more like someone DIDN'T want my money than when talking to that mean guy. It must be nice to think you're so successful you can treat everyone around you like dirt. The hours are also incredibly inconsistent. It's an easier and more pleasant experience to just go to Haggen, regardless how good the steaks are. I don't like giving snobby people my money.

This is a carnivore's heaven. Hand-selected and butchered meats from regional family farms committed to pasture-raised, antibiotic and hormone-free animals. This is a small shop that lends itself to customers who prize quality and personal service ahead of price and selection. That means they won't always have what you thought you wanted for dinner tonight, but they will work with you to find an alternative that probably will exceed your original expectation. Sometimes that requires patience, an open mind and a willing to explore alternative menu selections and expanding one's culinary skills with expert advice and the finest ingredients. That said, this is a shop that will find whatever you're looking for if you can provide them with a little time to identify a supplier and handcraft your order. Shaun grinds his own burgers and housemade sausages and prides himself on providing his customers with the finest, fresh beef, pork, lamb and poultry.

I came by today to see if you had an whole chuck shoulder clod. I was planning on doing a big thing on Superbowl sunday. The woman behind the counter just gave me a werid look and said "I don't know what that is but I have a chuck roast" yeah part of the clod. I like your product and still will give you business when I want quality proudct but maybe have someone in your store that knows what things are. Thank for your response but I have already made plans through cash and carry.

Fantastic quality. My new favorite butcher. Beautiful cuts of meat. The brats are the best I've ever had. They identify the local farms where the animals came from. Honestly it's a best-case scenario for a local butcher. Prices are a bit higher than the cheapest corporate meat you can source locally, but is that any surprise? I'd rather pay a little more and get the best possible quality. And with Carne, you only have to pay a little more, not even a lot more. Availability of specific meats at specific times is still a crapshoot, given their small size and limited stock on hand, but I expect this will improve as their customer base and their volume grows. I have no association with this business other than I am a very happy customer and recommend it highly to anyone else who likes to buy quality, locally sourced meats. Short of raising and butchering an animal yourself, this is the best possible source of fresh, local meat. No other store (not even the Market on Lakeway) can compare to this level of local quality.

I was very delighted to hear about this new butcher shop and visited it for first time yesterday. Not a big selection in the cases but if you know what you want they will most likely have it in the back. The store itself is very nice and clean, good atmosphere. All the meat is from the Northwest and of high quality. The prices seem to be reasonable. All of this would have earned a 5-star rating. However, I did not find the service to be very friendly. I was served by a guy with a beard and he seemed pre-occupied and a little arrogant. It wasn’t busy in the shop and he had a good opportunity here to make a new customer feel welcome but he never engaged with me in that way. When I said good-bye and wished him a good day he had already turned his back to me and never said anything. I love and want to support local small businesses but this is not the first time I’ve noticed that those run by hipster types are not that friendly to us non-hipsters, I’m just a regular older woman. I can’t really put my finger on it and not sure why this is because people are usually very friendly and nice in Bellingham shops. I will give Carne another chance though because I liked everything else about this place and maybe the guy just had an off day. UPDATE: Thanks for the reply, Shaun, I appreciate that! I look forward to seeing you again next time I'm in the shop.

The staff is really knowledgeable from how much of something I might need or different ways to prepare a product. Also, you can call ahead with an order which is especially helpful around holidays.

Everyone at Carne was amazingly helpful and nice. I ordered a few things, including some oxtails, which can be hard to find fresh. Not only did they cut those up for me, they were really helpful with recipes and tips on how to cook them. Everything I purchased from them cooked up beautifully and tasted like a dream. Comparing regular store bought meat to their selection of organic, grass-fed meat is like comparing fake spray cheese to a well-aged brie - there is really no comparison. IMO, the prices may be a little more than you may find in the grocery store, but the product is so much more in quality that it definitely worth the price, especially for local organic. I cannot recommend them high enough. Please go. Carne will not let you down.

You can taste the hiqh quality difference in all the products. I am slowly working my way through all their offerings, and everything has been fabulous. I'm not a big hamburger fan, but I purchased the ground a week ago and made hamburgers. With no fixings, condiments, nothing, absolutely naked, the burger was the best I have ever had - it's not my cookin', it's the meat.
