The majority of meat is frozen. If you want smaller portions, it's not going to happen here. They can be very curt and not customer service oriented.

I have had both a deer and cow elk processed here. Both were delivered on time and the quality was excellent. They are always busy during hunt season, but despite acting with urgency, I have never gotten the impression they were unwilling to help or answer questions like some others have suggested. The packaging is always sealed and clearly labeled and they even helped take it out to the car when my wife picked up the order. Their pricing is very competitive based on the multiple processors I have called. I will continue to do business here.

Kent Marshall

Very good meat. Custom butching available

Matt Gunderson

Place to go before a barbecue or an event that you have to feed a lot of people quality meat.

Willem Hendriks

I brought in a 500lb skinned cow from a farm to have butchered here and requested as many steaks as possible and the rest ground beef. I've never had a cow butchered before so I didn't know what to expect or really ask for. The guy seemed a little arrogant and annoyed with me, part of that was because I hadn't called ahead to drop the cow off and he didn't get his "kill fee" I'm assuming. He also charged me a 15 cent premium because he said the cow was dirty so he charged it as a game animal? I picked it up a week later and 80% (4 out of 5 bags) of my meat was ground beef also I didn't get any T bones or ribeyes. If all you want is ground beef this place is a great option if you can deal with the not so great customer service otherwise I'd personally STEER clear.

No better butcher shop around. The Carson brothers are the best in the business. They have been cutting my beef and pork for over 30 years.

Wayne Hamilton

Ribeye and pork fat is where it’s at!

Lyndie O

Kamie Young

Bought frozen grass fed beef of a few different cuts. 1.) There was a fly in the frozen beef. 2.) The cuts were terrible. Steak shouldn't be cut like stir fry. 3.) Tasted terrible. Worse then stuff I bought at Smith's.

Susie Goodspeed

Grade A! Wonderful customer service. Very professional. We used their mobile truck to butcher three steers in Payson and it was so clean, efficient and well done. The cows were happy until the last second and butchering at our home was super helpful instead of having to stressed them out by putting them on a trailer. We're very impressed and happy with their quality and service. We'll be back.

Chadwin Foley

Whenever i need a cut of beef that is WAY above par, I come to Carsons. I've compared steaks side by side with costco, smiths and ridleys and the Carson's steak over delivers in taste and quality EVERY TIME. If I could camp out in the parking lot with a hibachi and a fork, I would.

Cale Stus

Wish the had unfrozen grass fed beef. Great service! If they had pasture raised pork they’d be 5 star.

I raise high quality Wagyu Beef. I've used Carson's for over 10 years. They do a good job. First, they slaughter the animal with a single bullet to the head. It's immediately dead ... the animal is hanging out chewing grass one second and dead the next. They immediately cut it up and it's hanging in their refrigerated trailer in 20 minutes. There's No chasing or hauling the poor animal. This alone makes carson meats worth it. They also do a good job of aging , cut and wrapping the meat. I emphasis good, not perfect... but as good as anyone else I've tried. Are they going to trim your steaks to the exact specifications? No but they are acceptable. In other words They blow through the cutting process like every other meat processor in Utah. .. Probably because they have to make a profit. Let's face it The tight arse people in Utah county don't want to pay what it would cost to trim meat so its 100 percent ready to use for say fajitas. I personally would pay a little more for this, but that's subjective anyway. They are good at removing bone etc... their hamburger is great. Lamb steaks or fajita meat etc... might need a little bit of trimming before you cook it. That's expected. Basically trim your own pieces after you thaw them out and be glad there's a mobile butcher available. Cheers

We have been going there for years used to be a great place and now their service is horrible. We took our deer there this year and hot half the meat we normally do. Called to have 2 elk dropped off they said sure but when we got there they turned us away. Will not be recommending anyone to go there and you have lost my business!!!

Celeste Nils Mc

Asked simply for some beef to be sliced for fajitas. Told the lady (who is always there but do not know her relation to establishment) I would be in by 6 and she assured it would be ready. I show up and the meat is "ready" for me to be picked up, but not sliced. She said sometimes people order and don't pick up. The problem was that the butcher had already left and they weren't able to slice it? It was important it was done for various reasons and she didn't even blink an eye, she could really have not cared less So much for assurances on it being ready! Just because of that I lost my faith in Carsons. Time to go somewhere else.

I came in on a Friday late afternoon and the cut of fresh meat I originally wanted was gone, so I got a different cut. I get it, Father's Day weekend no problem. They looked great and fresh. I put them in the fridge and when we went to cook them on Sunday afternoon (48 hours later) they looked a bit brown/grey, but I didn't think much of it. Well, we cooked them to a nice medium...they tasted weird, like I couldn't put my finger on why. But then I realized they tasted like old blood. There were parts that tasted fine and normal but 50% or more of it was just inedible due to the gross old blood flavor (it tasted how the butcher smells). There was no instruction to use them within a certain timeframe, no date on the packaging other than the pack date which was 4 days prior. I've left steaks in my fridge for 48 hours before and never had an issue. So I'm not sure what I did wrong....but I was definitely disappointed because I spent a decent amount for steaks that we couldn't even enjoy.

I have always had very good service at Carson's. The lady with the bad review on the meat she bought could have taken it back. They are very good at customer service. I buy quarters of grass fed cows from them. So I've had hundreds of pounds of their meat. Always delicious!

Great shop and great service!! We are even getting a grass fed beef from them soon in addition to the other great meats we have already got. The are a please to work with. But I can't take my kids because they beg me for the beef jerky they are selling now at the fresh meat counter!

Stephen Briles

Carson's does several lambs for me each year. Great service even when they are very busy. I give them a cut list and they follow it each time. There slaughter method for sheep is about as humane as it possibly can be. I recover the skins and the organ meat and they are happy to oblige. Their skinning method yields a very clean hide for tanning with no or minimal cuts. I recommend them to all my friends.

Scottie Meek

Very quick turn around on my deer. However… I asked for the meat in chunks for jerky and sausage but that the back straps (tenderloins) be packaged separately and NOT in chunks. I got six 5 lb packages marked "deer chunks". When I called to let them know, they did nothing. No come in and get a couple pounds of beef tenderloin, no 20% off your next processing, not even a sincere apology. It was like "oh well… sorry". Some lady in the background was saying "nothing we can do. Just tell him sorry and get off the phone. What does he want us to do?" If I messed up someones order, especially the back strap of a deer (the best meat) I'd do what it takes to keep them as a customer. Apparently they have all the work they need cause they didn't give a crap about me. So guess what? I ain't their customer ever again and further more I am letting everyone that asks, how callus they were to me about THEIR MISTAKE! One star for getting my deer done fast, -1 star for the screw up, and -3 for their horse crap customer service.

Brian Greene

Warning: Don't take your wild game to Carson's. Absolutely the worst customer service I have ever experienced. I dropped off 4 quarters of an elk and requested that everything be cut into steaks (or chunks for jerky). The next day I was called and told it was done. What I got back was 75% grind (burger)--only 16 packages of steaks from an entire elk. Even worse, they claimed that the total weight of the 4 quarters I dropped off was only 130 pounds (for a bull elk?). When I called to discuss the problem, I was essentially told "too bad." They wouldn't accept any responsibility--their excuse was "that's our standard way of processing wild game." Even when I pointed out their failure to follow the specific instructions on the written order form, they denied any responsibility. So, after "losing" at least 25% of the meat and turning most of the remainder into burger, they still charged me their minimum 200 lbs rate for elk.

I love shopping here because they are a local butcher and because they have high quality, grass fed beef and they also have a great, FRESH selection of other cuts. I will shop here any day over Costco which is pretty much in the same parking lot. They are very clean and friendly every time I go in. They also have things here that you can't get at other places.

Camber Wilkey

My husband had his deer processed here. It was all made in to deer burger. We asked for 1lb increments, and most of the blocks were anywhere from 2-2.75 lbs. We also had them add beef fat. For some reason the meat is almost watery. We’ve had wild game processed elsewhere and I’ve never had any problems. I hate cooking with the meat processed from Carson’s. I’m not very impressed with the processing of the deer. I have heard great things about their cuts of meat, but have never tried them.

Ted Sanders

Bought a grass fed quarter from these guys. I've bought many quarters and halves from other people and this was by far the top cuts I've bought. Worth every penny. I'll be back for sure!

Carson's has the highest quality meat in Utah County. We love it so much, we haven't bought meat at the grocery store for a year. They can have special orders ready within a day or so. Their bacon is the best we've ever had and the grass fed beef is totally worth the drive. We've also bought loads of beef fat from them for making soap.

This place has the best quality steak I've ever eaten. We are foodies and have dined at some really great steakhouses. This rivals Ruth's Chris Steaks, I'm so happy to have such a quality place to buy meat so close. Also, check them out on Saturdays and they have BBQ out front. The guy running it seems so nice, has homemade BBQ sauces and freely gave little samples of it for me to try at home. Just good people.
