Because of mild September temperatures, I called and asked about bringing a bear for processing. Scotty said to bring it that evening and that he would stay open until we arrived. From there, he skinned, quartered and got the bear into refrigeration for processing. His friendly service, processing, packaging and willingness to meet me after hours was just as we hoped. ... and Scotty's bear sausage was amazing!
