Went here for restaurant week. The staff was very knowledgeable and friendly. They provided options for the kids. The appetizers were very good. The portion was small; not sure if it was because of the rest week. Ordered the pork belly. It was very tender and juicy. I ordered the $50 wagyu rib eye. It was very tender and cooked how I ordered. I felt that it was bland. Not sure if it was by choice or a mistake. The stake came with a sauce on the side that was fantastic. It was very nice to eat them together. To me it was not worth $50 but I would definitely go back.
The beginning of Fall meant that it was time for Gents to get back to what we do best, throwing dinner parties at Denver area restaurants. Given our later summer hiatus, we wanted to return to form with a bang and found the perfect host in Butcher's Bistro on Larimer. While we enjoy a locally foraged and micro-green adorned beet salad as much as the next, sometimes the primal callings of meat and charcuterie are too much resist. Butcher's Bistro graciously arranged a menu heavy on the items we like best: Cured meats, thoughtfully sourced cheeses, crispy pork and even a few greens for good measure. Other table favorites included a cheddar stuffed donut, beef bourguignon, and churros with a hearty chocolate sauce - all perfect dishes for the season. Although the meal was universally delicious it was paired with equally impressive service. Chef Russell and team treated us like long time regulars being welcomed into the dining room. And while we are always on the hunt for Denver's newest spots, Butcher's Bistro proves there are few substitutes for seasoned neighborhood favorites.
Food is great here, ambience is... unique. I'd definitely recommend for the steak. Want o go get dinner by yourself or with good friends? This is a great place. Want to take a girl for a first date? Maybe not so much.

Interesting menu of meat-inspired dishes - and yes, the Bison Ball is what you're afraid it is. Single-serving appetizers are cheap enough to get a couple. The steaks are expensive, but the quality of the meat and the preparation make it worth it.

Do you like meat? Was that a YES? GOOD! Because you are in for a treat! I do love meat, and this place fulfilled my highest expectations. Not only they have the greatest quality of meat, they are gonna cook to perfection, and when I say perfection, I mean whatever your cooking perfection point is. Look no further. The quality is well worth the price point!
This is a lovely place for dinner but I wish I had known some things before going. I'll explain the 3 stars. Their website is not clear about this but the choices for cuts of steak are limited. The waitress let us know they work their way down the animal. And clearly this must be something butchers do so that the offerings are spot on. And I would never argue with their pursuit of perfection but that means there were a total of two choices for steak. An 8 oz wagyu for $38 and a 24 oz T-bone for $120. Nothing in between. It was cooked perfectly, and a salmon dinner we also had was awesome. It is a cozy place and great wait staff. But this was a difficult price point and, had I known this ahead of time, because of the makeup of our group, we would have gone elsewhere. Know before you go so that you can make an informed choice.
Friendly and welcoming staff served up gourmet meat-based options at a reasonable price. Pricing of appetizers are a little steep: i.e. one deviled egg was $3. Nonetheless, the overall quality of the food was great.

We came here for dinner. Their dinner menu is great. They offer meatloaf during the autumn/winter months and it was fantastic. Their steak was cooked perfectly and tasted great, too. I recommend their charcuterie board, too. We will definitely be back soon!

Chill atmosphere. Like the NYC OG feel. Fresh meats and great food selections. Great attitudes from staff. Overall this place is rad in my opinion. Check it out.
This is one of my favorite places in Denver. The meat is absolutely incredible and the staff is a great bunch of people. I don't eat that much red meat, but I make sure to g here when I want some because it is the best in town!

THE MEAT GUYS OF DENVER! Butcher's Bistro is a true nose-to-tail farm to table experience. These guys utilize nearly every part of the whole animals they butcher weekly. Everything you're served is house-made and locally sourced except the bread and the cheese...they even make their own pickles, mustard, and charcuterie! They serve up dry-aged Colorado-grown wagyu beef and you can order a whole pig's head, served deconstructed of course. The dining room is cozy and there's an old quaint bar to belly up to. Everyone on the staff super welcoming and very knowledgeable and passionate about what they do here! They even sell cuts of meat and their own jerky out of the front case. If you're in town looking for a truly unique local experience...this is the place!
Hands down one of the best filet I’ve ever had. Our server, Alex, was awesome and very knowledgeable about the meats they offered. We received a complimentary item that we would’ve never purchased ourselves and it was really good. Nice little place for a romantic dinner.

At owners request, I’m elaborating on my three star review: Food was really good, but the favorite part was the fries and the bread on the sandwich. Why? Because there was barely any meat on the sandwiches, and on the poutine, so you couldn’t really get a feel for how delicious the meat might have been. The cheesesteak was great, that was the only one with a good enough amount of meat on it to really taste it. Also, service was really slow. Looked like there might have only been one server for he woke place on a Monday afternoon, but it took a while to get our order in.
This was one of many stops we made on a food tour. We tried the pig head appetizer, very tasty and delicious. We got to meet the chef/owner and he talked to us about his business and how he uses every part of the animal in preparing his creations. I would definitely love to come back here when I return to Colorado.
Do not leave if it's busy, it is worth it. There was quick, helpful, and friendly service.

Everything from the service to the selection of beer, wine, mixed drinks and especially the food was perfect! Well worth the price. 291 whiskey in any drink is phenomenal. Staff was very knowledgeable and offered great suggestions. We will definitely be going back!

The food was very good. Excellent even. But the review is 3 stars cause of a couple things. First, the our steaks were cold. This probably had a lot to do with the way it was plated. They pre-sliced the steak into a flower pattern, which resulted in it being cold by the time I got it. That brings me to the second fault, the portions are pretty small. The plan was clearly to sprawl a few slices of meat out to look like more than it was. I would estimate I was served about 4 ounces of steak. I won't be in a hurry back.

I came with my girlfriend and had a fantastic experience. We easily made a reservation online for a 7:00 dinner on a Saturday night. When we arrived, we were greeted warmly by the manager and sat down at a table near the bar. Although the dining area isn't large, the seating is arranged quite comfortably. Our waitress greeted us promptly, and did an excelling job of answering our questions and offering us recommendations. She had a precise knowledge of the menu, and guided us through our order expertly. We drank the porter and the sour, both on tap, ordered some tapas and brussel sprouts to begin, and shared the Crispy Chicken and Collard Greens with Brown Rice (the portions are reasonably sized, we're just light eaters). The aesthetic is well thought through and the experience crafted. I'm happy to recommend Butcher's Bistro to any of my friends.
This place blew my mind. We had the 5 course dinner special and you could tell, a lot of thought went into every little detail on each plate. The pig head amuse was the surprise of the night, bursting with flavor. Not far behind, was the liver paté which exceeded my expectations. Finally, the wagyu steak was so tender, it just melts in your mouth. Not only was the food phenomenal, the craft cocktails were excellent. But what really drove it home was the staff and execution. Each course was carefully prepared and timed perfectly, never arriving before we finished our current course and never long after either. Never change guys, never change!

This is my second visit here, but certainly not the last. The menu is not expansive, but every item is well executed and thought out. The burger of the day is always a winner, and the best part is that if you order it medium-rare, it comes out medium-rare! Also a don't-miss item from the starter menu-the donut with smoked cheddar stuffing. It makes an amazing dessert for one, and is a perfect blend of sweet, savory, spicy, crispy, and creamy. I haven't had a chance to try the charcuterie, but it's on my list for the next visit. The bartender Kelly knows his stuff and will keep you well-taken care of. Don't miss this place!

I am a vegetarian that walked into a restaurant called the Butcher's Bistro. Annoying I know. However I was kindly greeted by Andrew and Bryce and they served me the donuts and a veggie plate that was incredible. I WOULD ALSO BUY BOTTLES OF THAT FRY SAUCE. The chef also let me know that their food is from farms they know and visit to ensure all the meat is humanely reared and then later butchered on site. Long review but this place is great.
An absolutely stunning meal from start to finish! The pig head amuse started us off and it was so flavorful. I had the lamb and my boyfriend has the steak frites. Everything was cooked perfectly. I can't recommend this place enough to anyone in Denver.
Holy cow amazing! My husband gets their burgers every Wednesday through meal pal and I wish they would add it to their regular menu because they are the best burger I've ever had.
Our server Zachary was great very professional and friendly. They have a good selection of local beers. The Cut du Jour steak was one of the best I ever have, but a little bit small. The beer flavored sausage was not that tasty, but maybe just compared to the steak. The fries was really good too. Finished with an Espresso Martini which is highly recommended. Great overall experience.
Great food and custom cocktails
There was a 45 minute wait for a grilled chicken salad. The salad was $14 but it was only 7 bites. This was the worse experience I’ve had with a salad that wasn’t worth the money. The restaurant had one other table with 2 people seated, so there was absolutely no excuse for the slowness. This was the worst.

The steak's delicious, and we love their amuses, which offer you the option to try a lot of yummy bites. This is always my go-to for a nice steak dinner out and my recommendation to others looking for a great local spot!
The food was delicious and fresh, the service was friendly and prompt, and there was parking right outside the door! We had an excellent lunch, and really appreciate that the meats are sourced locally and ethically.
I can't say enough about the food. The variety and quality were beyond anything I expected. The we got the bison balls and bacon wrapped dates as starters and loved both.

Impressive and daring items on the menu- most that I had pulled it off excellently. As others have mentioned the pork chop is a real winner as was the pastrami salmon/beef heart/bison/pig head small plates. The smoked cheddar donut needs to leave the menu to make room for whatever else innovative/impressive I'm positive the chef could put in it's place. Quality cocktail program seems to be maturing. I enjoy both extensive and quality limited wine lists - this list was limited and sadly basic. Would love to see a wine list evolve here to match the quality of the chef's dishes.
Phenomenal carnivore's heaven!!!!
I've only been here a couple of times, but it's quite honestly my favorite restaurant right now. The sandwiches were incredible (the roasted chicken was so good that I finished it even after I was full). The cocktails were all awesome, and there were lots of surprising and interesting drinks - a wine cocktail that has Malbec and egg whites and is a good summer drink!? But it works. I never would've thought to order the shishito peppers on my own, but went with it because they were recommended - they were simple and excellent. The charcuterie boards are really good, focused on the meats all done in-house. For the adventurous eater, there are some meaty gems here. Pro tip: if it's warm enough, sit on the back patio. Best hidden patio in Denver.

Well I used to enjoy this place, but I just drove all the way across town, got there 1.5 hours before close, paid the meter, walk in and the guys say they’re closing early or as soon as we get our food. Hands down the best meal I have had in the downtown Denver area! The Marrow butter with smoked salt and herbs is outstanding. I ordered the Pork Chop which was juicy and cooked perfectly. It had more flavor than I could imagine. The real surprise eas the dessert. It was a play on a Charcuterie board but with chocolate, caramel, apples, plums, candied bacon, cheese, a brownie, and a fog preserve all served with some spiced waffer cookies. It was delicious!
Try tyre pigs head appetizer its the best. Had the steak for dinner and it was also amazing. Great beer selection to go with a good cut of meat and fun atmosphere. Coming back to this place again, just can get a little pricy so more of a special occasion.

Butchers Bistro provides an amazing experience from from the door to the final fork. With some of the best local meats and dishes prepared by artisan and master chef Russell Klase and exquisitely presented by an expert server true to his trade craft, Evan, patrons lucky enough to find this gem will not leave disappointed. Even the bar staff is true to form with their hand crafted cocktails. Couple all of this with a unique menu of flavor, superb choices of meat, & many amazing dishes, and this place could easily be a contender for one of the best restaurants in Denver.

I visited then once before about two years ago and had their burger. It was one of those visit. Quick. But I noticed that they do love their meat. Like me me :) I'm a fan then and still am one. Recently as two weeks ago I went back and had their steak. A thick slab of meat good for two. I couldn't finish that even in my dreams. It was their wagyu ribeye with a side of fries. The fries was a really good sidekick to this behemoth. Crunchy and salty! The meat. Tender and juicy and treated very well like I wanted. No extra sauce covering it up. Just the meat in full glory! Amen! Simple decor. Just a few displays on the wall almost to remind you that you are indeed in a steakhouse.

Went this past Saturday at 7 pm. Reservation was on time and service was good. Ordered Bread & Beef Butter (did not taste any bone marrow in the butter), Bistro Salad (fresh and tasty), Steak Frites (shoulder, not a great cut for a petit steak in my opinion), and the Pork Chop (needed fat/seasoning/flavor). The dipping sauces (siracha and horseradish) were very good, but overall, my guest and I thought the meal was solidly average which is not what you really want when dining at this price point. Nothing really negative about any of it, but overall this particular experience was underwhelming and gave us little reason to consider returning in the future.

Amazing preparation on the most choice meats, fish and poultry. Really unusual, delicious with the sides and veggies. Very sophisticated bar with inventive, but not weird/pretentious cocktails. And the owners and entire team are always A+++. For a great dining experience in a really comfortable atmosphere at reasonable prices, you cannot beat this place!

Have been here twice and loved it both times. The starter bites are wonderful - love that you can try so much flavor but not get a giant plate of something. The meat cuts and preparations are excellent. Service has been good when they were packed on a weekend and also mid week when more slow. Last trip - I asked for a custom creative cocktail made from some combination of what I told them were my favorite ingredients and flavors. The result was divine!
